The Department of Food Science and Technology (DFST) of the BOKU-University of Natural Resources and Applied Life Sciences Vienna is organised in six divisions representing the total food supply chain (Animal Food and Nutrition, Food Technology, Food Biotechnology, Food Microbiology and Hygiene, Food Chemistry and Food Quality Assurance).

DFST is the major Austrian research institute for food technology and is an experienced and reliable partner with universities and industries. DFST is well equipped with analytical instruments and has a pilot plant and a laboratory for kitchen applications in connection with a computer-aided laboratory for sensory analysis. The pilot plant includes all necessary side rooms and equipment to realise the pilot scale processing of most unit operations and unit processes used in the industrial production of foods.

DFST is devoted to the food supply chain from primary agricultural products until consumption of food. The thematic scope includes: quality and safety aspects of primary products from agricultural livestock as affected by feeding, desired and undesired nutritional properties of food and feed, chemical, biochemical, physical, (micro)biological and sensory characterisation of food and feed, nature and properties of enzymes, microbiology and hygiene of foodstuff, interrelationships of foodstuff contents, with endogenous and exogenous parameters, pharmacological and toxicological aspects of food and feed, food processing; investigation, characterisation, development and optimisation of unit operations and unit processes, impact from production processes and storage on food properties and food quality, application of statistical methods and application of strategies and tools of quality management including information technologies.
