BioCentrum-DTU is a department at the Technical University of Denmark. The research at BioCentrum-DTU deals with fundamental and applied bioscience, spanning from molecular studies on microorganisms to design of food and biotechnological processes. BioCentrum-DTU is part of the Centre for Advanced Food Studies (www.levnedsmiddelcentret.dk). Around 350 academic and technical staff works at BioCentrum-DTU.
Biochemistry and Nutrition Group
The main activities of the Biochemistry and Nutrition Group lie within the field of nutrition or are related to food. Through the use of protein structure/function relationship investigations, biochemical, cellular and physiological methods, the group seeks to explain the mechanisms and interactions of metabolism, intestinal absorption, external influence on the immune system, cell membrane functions, functionality and nutritional quality of food. Cereal proteomics plays a special role both in characterization raw materials. The ultimate aim is to optimize food production by identifying the biochemical mechanisms behind health promoting and nutritional properties of food and raw materials.
