University College Cork (UCC) is an educational institute that serves a large area in the southern region of Ireland, where it provides undergraduate and postgraduate Degrees across all the major disciplines. UCC has been the Irish centre for education and research in Food Science since 1929, and is now recognised as a major national resource for expertise in Food Science and Technology. The Faculty of Food Science and Technology has a total of 26 academic staff, 90 research scientists and over 80 postgraduate students. UCC also has HACCP compliant pilot- scale baking facility, where a wide variety of cereal products can be produced. Also a wide variety of analytical equipment such as texture analyser, image analysis, rheofermentometer, rheological equipment etc is available to the group. A fully equipped experimental kitchen is part of the facility. Laser microscopy and electron microscopy facility and sensory evaluation unit are also available to the researchers.
